These are five food that can use novel technologies in there techniques to sustain food durability (potato, pickles, tomato,apple and garri) they novel technique depends on the superconductivity, such as level of ions in the food.either homogeneous internal structure or heterogeneous internal structure, which the electric conduct can be through the following processes (cooking, drying, baking, tempering, sterilising, etc)all these relying on physical capacity, thermal conductivity and diffusivity that determines the food processing method in novel technique and technology

Assignment 3:

The five African traditional food that can be preserved with Novel thermal technology are; Fufu, Ogbono soup, Beans, Amala, Garri.

The heat from this process is to prevent attack by pathogens such as bacteria and molds or oxidation that causes the destruction of essential biochemical compounds. The process also prevents spoilage because high temperature kills most of the pathogens.
