COURSE DESCRIPTION: The course is a part of the program – Certificate in Food Product Development and Innovation which was designed for a basic understanding of food making innovative processes, preservation, and new food product development strategies in food processing with a strong emphasis on small and medium-scale food business operations. Students will learn how to successfully initiate, organize, and carry out a product development process to be prepared better for real-world challenges.

- Design a unique food product listing all necessary ingredients
MODULE ONE (WEEK 1): Introduction to Food Product Development

- Submit the assignment for the module (Class Trivia). If you have any questions, please do not hesitate to contact me.
- Read the assignment submitted by other students and respond to them. Identify what you find intriguing about the product they have listed and highlight something in common with the products you have listed as well.
MODULE TWO (WEEK 2): Introduction to food product development
PROVERB: After polluting the stream, remember you will come back to fetch your drinking water from the stream. A Nigerian (Igbo) proverb.
- Read the note and then watch the video associated with the module. Also, read the attached case study for this module.
- Proffer an answer to the assignment question (Class Trivia), ensure that the drivers listed are based on the products you stated in module one.
- Read the assignment submitted by other students and respond to them. Identify what you find intriguing about the listed “trends” they have listed and highlight something in common with the products you have listed as well.
MODULE 3(WEEK 3): Steps in Food Product Development

- Read the note and then watch the video associated with the module. Also, read the attached case study for this module.
- Proffer an answer to the assignment question (Class Trivia), ensure that the drivers listed are based on the products stated in module one.
- Read the assignment submitted by other students and respond to them. Identify what you find intriguing about processes involved in the product they have developed and highlight something in common with the products and/or processes you have designed.
MODULE 4 (WEEK 4): Design of a food product
PROVERB: A goat does not destroy a vigilant or smart person’s farm.
- Do a detailed plan and design of your chosen food product.
- Prepare for a presentation of your designed food product. There will be a live zoom meeting for the class (tentative – Saturday, Oct. 2, 2021, at 10:00 AM CST).
